Soft flesh but surprisingly flavorful with a fresh ocean character. Slight sweetness shows up with a light briny note that feels balanced. The meat flakes apart in clean delicate layers once cooked properly. The outside turns golden crisp while the inside stays juicy and tender. It absorbs spices extremely well letting masala settle deep into the flesh. Garlic chili turmeric and lemon butter all work beautifully with it.
